Ingredients:
DRY
1¼ c / 206 g Cara’s All-Purpose Gluten-Free Blend (refer to page 166 of the cookbook for the blend recipe)
¾ c / 150 g granulated sugar
¼ c / 22 g cocoa powder
1 tsp cream of tartar
½ tsp baking soda
½ tsp xanthan gum
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
WET
4 Tbsp / 56 g vegan butter, softened
4 Tbsp / 56 g non-hydrogenated shortening
1 Tbsp / 7 g flaxseed meal plus 3 Tbsp / 45 ml water, mixed and allowed to thicken for 5 minutes (this creates a flax egg)
1 tsp vanilla extract
ADD-IN
½ c / 88 g nondairy chocolate chips
FOR ROLLING
2 Tbsp / 26 g granulated sugar
1 tsp ground cinnamon
Method:
- In a medium-sized bowl, whisk together all of the dry ingredients EXCEPT the ¾ cup of granulated sugar and the ¼ cup of cocoa powder. Set aside.
- In a large mixing bowl, using an electric mixer, beat the softened vegan butter, shortening, and the ¾ cup of granulated sugar together until the mixture is light and fluffy, typically 2-3 minutes.
- Add the cocoa powder and the prepared flax egg (flaxseed meal mixed with water) to the butter mixture. Beat until fully combined and smooth.
- Stir in the vanilla extract until just incorporated.
- Gradually add the reserved dry ingredients into the wet mixture, beating on low speed until just combined. Be careful not to overmix.
- Gently fold in the nondairy chocolate chips using a spatula.
- Cover the dough and chill in the refrigerator for at least 30 minutes. This helps the dough firm up, making it easier to handle and prevents the cookies from spreading too much during baking.
- While the dough is chilling, preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Prepare the cinnamon-sugar coating: In a small, shallow dish, mix together the 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon for rolling.
- Once the dough is chilled, scoop out heaping tablespoonfuls of dough and roll them into smooth balls with your hands.
- Roll each dough ball generously in the cinnamon-sugar mixture, ensuring it’s evenly coated.
- Place the coated dough balls onto the prepared baking sheet, leaving some space between them. Gently flatten each cookie slightly with the back of a fork.
- Bake for 13 to 15 minutes, or until the edges are lightly browned and the centers are just set. Do not overbake to maintain a soft, chewy texture.
- Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before carefully transferring them to a wire rack to cool completely. This step is crucial as gluten-free cookies can be delicate when warm.
