The Art of the Bowl Meal: Simple, Satisfying, and Sustainable Vegan Eating
Becky Striepe's approach to bowl meals is revolutionary in its simplicity, making healthy, plant-based eating accessible and enjoyable for everyone. The core idea is brilliantly straightforward and incredibly adaptable. You begin with a foundational layer—a comforting bed of grains, fluffy mashed potatoes, vibrant fresh greens, or even a hearty pasta. This base sets the stage for the flavors and textures to come.
Next, you pile on a medley of colorful, nutrient-rich vegetables. Think roasted broccoli, sautéed bell peppers, steamed carrots, or crunchy cucumber slices – whatever fresh produce you have on hand can find a home here. Following the veggies, you introduce your protein component, which could be anything from seasoned tofu and tempeh to legumes like chickpeas or black beans. This layer is crucial for satiety, ensuring your meal is both delicious and filling.
The grand finale is a generous drizzle of an "awesome sauce" or dressing that seamlessly ties all the elements together, infusing the dish with incredible depth and flavor. This sauce is often the secret ingredient that elevates a simple collection of components into a harmonious culinary experience. What makes this framework truly exceptional is the sheer versatility it offers. Becky's cookbook provides a treasure trove of well-developed recipes for each of these core components – from various grains and proteins to an array of delectable sauces. This extensive collection unlocks endless possibilities for creating your own unique and delicious combinations. Whether you're craving something warm and hearty or light and refreshing, the flexibility of bowl meals allows you to tailor every dish to your preferences, dietary needs, and what's available in your pantry. It empowers you to become a culinary artist in your own kitchen, crafting meals that are not only nourishing but also perfectly suited to your taste buds and busy lifestyle. This method isn't just about cooking; it's about building a sustainable and creative way of eating that you'll genuinely look forward to.

A Personal Favorite: The Unforgettable Peanut Butter Tofu Bowl Experience
Among the myriad of ingenious possibilities presented in Becky's "Bowls" cookbook, the Peanut Butter Tofu Bowl truly stands out as a personal favorite. It's a stellar testament to how simple, wholesome ingredients can harmoniously converge to create an explosion of flavor, comfort, and deep satisfaction. This particular recipe has become a staple in my kitchen, a testament to its irresistible appeal and ease of preparation.
My rendition of this exquisite bowl always begins with Becky's "perfect mashed potatoes." And let me assure you, they don't just meet expectations; they profoundly exceed them! These are not your average mashed potatoes. They are lovingly infused with nutritional yeast, which imparts that utterly irresistible "noochy," savory umami flavor that is a hallmark of so many fantastic vegan dishes. Perfectly seasoned with freshly ground black pepper and boasting an unbelievably creamy texture, these mashed potatoes are a revelation on their own. They form a delightful, comforting, and remarkably flavorful base that cradles the other components of the bowl, providing a grounding, satisfying element to every bite.
The true star of this culinary show, however, is undoubtedly the peanut butter tofu. Imagine firm tofu cutlets, pressed and then baked to a beautiful golden perfection, generously coated in a rich, savory, and subtly spicy peanut butter sauce. This sauce is not merely a condiment; it’s a vibrant, complex infusion that transforms the humble tofu into something extraordinary. Its depth of flavor, balancing sweet, salty, and spicy notes, is so incredibly good that it often inspires spontaneous creative detours in my kitchen. On one memorable occasion, I found myself with a little extra sauce and, on a whim, tossed some fresh cauliflower florets into it before baking them alongside the tofu. The result? Deliciously caramelized, tender-crisp cauliflower that was so addictive, it vanished from the baking sheet almost as quickly as it emerged from the oven! It's a running, good-natured joke in our household how much cauliflower we consume. Perhaps the blog's tagline should indeed be "Eating Cauliflower till we photosynthesize" – a playful testament to its remarkable versatility and our endless, unwavering love for this magnificent vegetable!
This Peanut Butter Tofu Bowl is more than just a meal; it's a culinary journey that masterfully balances rich, earthy flavors with fresh, vibrant notes. The combination of the warm, velvety mashed potatoes, the savory and slightly sweet peanut butter tofu, and the crisp, invigorating greens creates a harmonious and deeply satisfying eating experience. It's the kind of meal that feels wonderfully indulgent and comforting, yet it's absolutely packed with wholesome plant-based goodness. This makes it an ideal choice for a nourishing, quick lunch or a fulfilling, flavorful dinner, perfectly suited for weeknights when you crave something special without spending hours in the kitchen.

Ingredients
For the Peanut Butter Tofu Bowl
- 1 block extra firm tofu, pressed and sliced into cutlets
- 1 batch Peanut Butter Sauce, (see recipe below)
- 1 batch Perfect Mashed Potatoes, (see recipe below)
- A generous handful of fresh greens per bowl (such as spinach, kale, or mixed greens)
- Salt and pepper, to taste
For the Creamy Peanut Butter Sauce
- 2 inch piece of fresh ginger, coarsely chopped
- 2 cloves of garlic, peeled
- 1/2 cup creamy peanut butter
- 1 tablespoon soy sauce (or tamari for a gluten-free option)
- Juice of 1/2 a fresh lemon
- 1-2 teaspoons Sriracha sauce, to taste (adjust for desired level of spice)
- 2-6 tablespoons of water, as needed to reach desired consistency
For the Perfectly Mashed Potatoes
- 2 large red or white potatoes (about the size of a tennis ball each), cut into 2-inch pieces. The thin skin is key, as we are not peeling them for added nutrients and texture.
- 1/4 cup or more cup unsweetened soy or almond milk, plus extra, as needed
- 2 tablespoons olive oil (or your preferred vegan butter)
- 1/4 cup nutritional yeast flakes
- Salt and freshly ground black pepper, to taste
- Green onions, chopped (optional, for garnish and a touch of freshness)
Instructions
Step 1: Make the Creamy Peanut Butter Sauce
-
Combine the coarsely chopped ginger, peeled garlic cloves, creamy peanut butter, soy sauce (or tamari), fresh lemon juice, and Sriracha into your blender or food processor. Blend thoroughly until the mixture achieves a wonderfully smooth and creamy consistency. If the sauce appears too thick or struggles to blend, gradually add water, one tablespoon at a time, until it reaches your desired pourable texture. Taste the sauce and adjust the seasonings, adding more Sriracha for extra heat, or a touch more lemon for brightness, as needed. Set aside.
Step 2: Prepare the Perfectly Mashed Potatoes
-
Place the cut 2-inch potato pieces into a large pot. Add enough cold water to fully submerge them. Bring the water to a rolling boil over medium-high heat, then reduce the heat to a gentle simmer. Cook for 10-15 minutes, or until the potatoes are completely fork-tender and can be easily pierced with a fork. Once cooked, carefully transfer the potatoes to a colander and drain them thoroughly, ensuring all excess water is removed. This step is crucial for achieving creamy, non-watery mashed potatoes.
-
Return the drained potatoes to the empty pot or a large, sturdy mixing bowl. Begin to mash the potatoes slightly with a potato masher. Then, gradually incorporate the unsweetened soy or almond milk and olive oil (or vegan butter). At this initial stage, the mixture might appear quite liquidy, but there's no need to panic! Just continue mashing diligently. Aim to break down any potato pieces larger than a pea for a generally smooth texture. If you prefer an exceptionally creamy, lump-free mash, you can use an immersion blender for a few seconds to achieve a silkier consistency.
-
Once the potatoes have reached your preferred consistency, gently fold in the nutritional yeast. Stir vigorously to ensure it is completely combined and evenly distributed throughout the mash, imparting that wonderful cheesy, umami flavor. If the mashed potatoes seem a little dry after this, add an additional tablespoon of soy milk at a time until they are perfectly creamy and moist. Remember, the water content of potatoes can vary, so the exact amount of liquid needed may differ slightly.
-
Finally, season the mashed potatoes generously with salt and freshly ground black pepper to taste. If using, sprinkle with finely chopped green onions just before serving for an extra layer of fresh flavor, a slight oniony bite, and a pop of color. Keep warm until ready to assemble.
Step 3: Assemble Your Delicious Peanut Butter Tofu Bowl
-
1. Preheat your oven to 350°F (180°C).
-
2. Carefully slice your pressed block of extra-firm tofu into 8 even cutlets. Arrange these tofu cutlets in a single layer in a lightly greased 9x12-inch glass baking pan. Ensure they have enough space to bake evenly.
-
3. Generously pour the previously prepared Peanut Butter Sauce over the arranged tofu cutlets in the baking pan. Use a spoon or brush to make sure each piece is thoroughly coated, ensuring maximum flavor penetration. Bake for 30 minutes, allowing the tofu to crisp slightly around the edges and absorb the delicious, aromatic sauce.
-
4. While the tofu is baking, prepare your Perfect Mashed Potatoes according to the detailed instructions provided in Step 2. This synchronized timing ensures both delicious components are ready around the same time for fresh, warm assembly.
-
5. To assemble your wholesome bowls, divide the fresh greens evenly among four individual serving bowls. Spoon a generous portion of the creamy, warm mashed potatoes alongside the greens in each bowl. Artfully dish up two of the perfectly baked, saucy tofu cutlets on top of the greens and potatoes. If there's any remaining peanut butter sauce in the baking dish, drizzle it over the tofu and potatoes for an extra burst of flavor. Serve immediately and savor every bite of your incredibly satisfying, flavorful, and nutrient-packed Peanut Butter Tofu Bowl!
