It’s the ultimate comfort food for any season, bringing warmth and a sense of well-being with every spoonful.
- Gluten-Free by Design: By opting for rice instead of traditional wheat noodles, this soup is naturally gluten-free, making it a fantastic choice for those with celiac disease or gluten sensitivities. It ensures everyone can enjoy a classic “noodle soup” experience without compromise.
- Allergy-Friendly Options: Beyond being gluten-free, this recipe is inherently nut-free and offers easy soy-free alternatives (like using coconut aminos instead of tamari). This makes it highly accommodating for diverse dietary requirements and allergies, allowing more people to enjoy a hearty and delicious meal.
- Nutrient-Packed: Loaded with fresh vegetables like carrots, celery, and onions, and protein-rich chickpeas, this soup is a powerhouse of essential vitamins, minerals, and fiber. It supports digestion, provides sustained energy, and contributes to overall health.

Key Ingredients for Our Vegan Chickpea Rice Soup and Smart Substitutions
The magic of this comforting soup lies in its simple yet powerful ingredients. Each component plays a crucial role in building the layered flavors and hearty texture that make this dish so satisfying.
- Aromatics (Onion, Garlic, Carrots, Celery): Often referred to as the “holy trinity” in cooking, this combination forms the foundational flavor base for our brothy soup. Sautéing them until golden releases their sweet, savory essence, which infuses the entire broth with depth.
- Herbs & Spices (Thyme, Oregano, Poultry Seasoning, Onion Powder, Black Pepper): These seasonings are vital for replicating that classic, nostalgic “chicken noodle soup” flavor profile in a vegan way.
- Thyme and Oregano: Offer earthy, slightly peppery notes that are quintessential to savory broths. Fresh thyme adds a brighter, more vibrant flavor, while dried is a convenient and effective alternative.
- Poultry Seasoning: This blend typically contains sage, rosemary, thyme, marjoram, and sometimes nutmeg. It’s the secret weapon for imparting a savory, umami-rich “chicken-like” essence without any animal products. If you don’t have it, a generous dash of sage, rosemary, nutmeg, and marjoram works wonderfully.
- Onion Powder & Black Pepper: Intensify the savory profile, adding a subtle depth and a hint of warmth.
For alternate herb substitutes, consider adding a bay leaf during simmering or a pinch of fresh dill for a bright finish.
- Chickpeas: The Plant-Based Powerhouse: Chickpeas (also known as garbanzo beans) are the star protein of this soup. They provide a wonderful hearty texture, making the soup incredibly filling and nutritious. They are rich in fiber and plant-based protein, contributing to a truly satisfying meal.
- Substitution Options: If you don’t have chickpeas or want to vary the protein, a cup of rehydrated soy curls, other white beans (like cannellini or navy beans), shredded seitan, or tender young jackfruit are excellent “chikin” substitutes.
- White Basmati Rice: The Gluten-Free Noodle Alternative: We use white basmati rice in this recipe to ensure it remains gluten-free while providing a comforting, familiar texture similar to noodles. Basmati rice is known for its fragrant aroma and light, fluffy texture, and it’s generally easier to digest, which is a plus when seeking a healing meal.
- Brown Rice Variation: If you prefer brown rice, it’s absolutely possible to use it! However, brown rice takes longer to cook. To avoid overcooking the vegetables into mush, we recommend using partially cooked brown rice and simmering it in the soup for a few minutes longer until it reaches your desired tenderness. Cooking brown rice from scratch directly in the salty broth can take upwards of 30 minutes, which will compromise the texture of your other veggies.
- Noodle/Pasta Alternative: For those who prefer a more traditional “noodle soup” feel and aren’t strictly gluten-free, feel free to substitute with 7 ounces of your favorite pasta or noodles (gluten-free or regular). Adjust cooking time according to package directions, adding them towards the end of the soup’s simmering to prevent them from becoming too soft.
- Vegetable Broth: The Liquid Gold: A good quality vegetable broth is essential for a flavorful soup. Choose a low-sodium option to better control the overall saltiness of your dish.
- Salt & Soy Sauce (or Tamari/Coconut Aminos): These are crucial for seasoning and enhancing the overall savoriness of the soup.
- Salt: Adjust according to your broth’s sodium content and personal preference.
- Soy Sauce / Tamari / Coconut Aminos: Add a fantastic depth of umami. Use tamari for a gluten-free option, and coconut aminos for a soy-free alternative.
Customize Your Comfort: Tips for Personalizing Your Chickpea Rice Soup
One of the joys of cooking this Vegan Chickpea Rice Soup is its adaptability. Feel free to make it your own with these creative additions and modifications, ensuring every bowl is perfectly suited to your taste.
- Boost the Veggies: This soup is a fantastic way to sneak in extra greens! Stir in a handful of fresh spinach or chopped kale during the last few minutes of cooking until wilted. Other great additions include diced zucchini, sliced mushrooms, bell peppers, or even frozen peas.
- Amp Up the Protein: While chickpeas are excellent, you can easily add more plant-based protein. Cooked lentils, crumbled firm tofu, or even a can of rinsed cannellini beans can be added for extra substance and satiety.
- Flavor Variations:
- Spicy Kick: Add a pinch of red pepper flakes or a dash of your favorite hot sauce for a gentle warmth and a subtle kick.
- Tangy Brightness: A squeeze of fresh lemon juice or a splash of apple cider vinegar right before serving can brighten the flavors considerably, adding a delightful zing.
- Umami Boost: A teaspoon of nutritional yeast can add a slightly cheesy, savory depth, while a spoonful of miso paste (dissolved in a little warm broth before adding) introduces a complex umami punch.
- Herb Harmony: Don’t be afraid to play with fresh herbs! Fresh parsley, dill, or chives can be stirred in at the very end for a burst of fresh flavor and vibrant color, enhancing both the aroma and visual appeal.
- Creamy Texture: For a richer, creamier soup, you can blend a portion of the soup (about 1-2 cups) until smooth and then stir it back into the pot, or add a splash of full-fat coconut milk or a swirl of cashew cream for an indulgent touch.
Cooking Methods: Stovetop vs. Instant Pot
This versatile soup can be prepared beautifully on the stovetop or made even quicker in an Instant Pot, giving you options based on your preference and available equipment.
Stovetop Method (Classic & Easy)
The traditional stovetop method allows for gentle simmering and easy monitoring of flavors and textures. It’s a straightforward approach that yields a consistently delicious result, perfect for a relaxed cooking experience. Simply follow the instructions below, paying attention to the rice cooking time to achieve perfect tenderness.
Instant Pot Method (Fast & Convenient)
For those short on time, the Instant Pot is a game-changer. It significantly reduces cooking time while melding the flavors perfectly under pressure, making it an excellent option for busy weeknights. Our Instant Pot instructions (found in the recipe notes) streamline the process without sacrificing taste or quality.

Serving Suggestions & Storage Tips
Enjoy your warm, comforting soup however you like, and make the most of any leftovers with these simple tips!
- Serving: For a vibrant finish, garnish your bowl with a generous sprinkle of fresh chopped parsley or cilantro. These herbs not only add color but also a burst of fresh flavor. Serve the soup alongside a slice of warm, crusty bread for dipping, or a simple side salad dressed with a light vinaigrette for a complete and satisfying meal.
- Storage: Leftover soup can be stored in an airtight container in the refrigerator for up to 3-4 days. The flavors often meld and deepen beautifully overnight.
- Freezing: This soup freezes wonderfully! Allow it to cool completely to room temperature before transferring it to freezer-safe containers or heavy-duty freezer bags. It can be frozen for up to 3 months. To reheat, thaw in the refrigerator overnight, then gently warm on the stovetop over medium-low heat or in the microwave. If the soup appears too thick after thawing, add a splash of vegetable broth or water to reach your desired consistency.

Ingredients
- 1 tsp oil, or use 3 tbsp broth
- 1/2 medium onion, chopped
- 4 to 6 cloves of garlic, finely chopped
- 1 cup chopped carrots
- 4 celery stalks, chopped small
- 1 tsp fresh thyme, or 1/2 tsp dried
- 1/2 tsp dried oregano
- 1 tsp poultry seasoning, or 1/2 tsp sage, generous dashes of rosemary, nutmeg, marjoram
- 1/2 tsp onion powder
- 1/8 tsp or more black pepper to taste
- 4.5 to 5 cups broth
- 15 oz can of chickpeas or 1.25 cups cooked
- 1/2 tsp salt, less or more depending on if the veggie broth is salted
- 1 to 2 tsp soy sauce, tamari for gluten-free, coconut aminos for soy-free
- 1/3 cup long grain white rice (e.g., white basmati; see notes for brown rice), washed well and drained

Notes
Instant Pot Method:
Begin by following Steps 1 and 2 using the ‘saute’ function on your Instant Pot. Once the vegetables are softened and seasoned, add the rice and 4 cups of broth, mixing everything together. Close the Instant Pot lid and set the valve to ‘sealing’. Pressure cook on ‘Manual’ or ‘High Pressure’ for 5 to 6 minutes. Allow the pressure to release naturally (NPR). If the broth is too thin, you can sauté for a few minutes after the pressure release to reduce it to your desired consistency. Taste and adjust seasonings, then garnish and serve.
Substitutions:
- Protein: While chickpeas are the primary protein, you can easily substitute with 1 cup of rehydrated soy curls, other white beans like cannellini or navy beans, shredded seitan, or tender young jackfruit for variety.
- Grain: White basmati rice ensures this soup is gluten-free. For a brown rice variation, we recommend using partially cooked brown rice to avoid overcooking the vegetables. Simmer the partially cooked brown rice in the soup for a few minutes longer until it is tender. Alternatively, if you prefer noodles, you can use about 7 ounces of your favorite gluten-free or regular noodles/pasta instead of rice; add them during the last 8-10 minutes of the soup’s cooking time, or according to their package instructions.
