Ingredients

  • 1 tablespoon safflower oil
  • 1 medium onion, minced or shredded
  • 1 carrot, finely chopped or shredded
  • 1 russet potato, finely chopped or shredded
  • 1/4 teaspoon celery salt
  • 2 cups vegetable broth
  • 16 oz frozen corn kernels
  • Salt and ground black pepper (to taste)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon liquid smoke
  • 2 cups plain unsweetened almond milk
  • 1/2 cup raw cashew pieces, soaked for 3 hours, then drained
  • 1 chipotle chile in adobo sauce, (I added 2 for extra spice)
  • 2 tablespoons minced fresh parsley (for garnish)
  • 2 oz chopped pimientos, drained (for garnish)

Instructions

  1. Heat the oil in a large saucepan over medium heat. Add the onion, carrot, and potato. Cover and cook for 4 minutes to soften. Stir in the celery salt, vegetable broth, frozen corn, and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to a simmer. Stir in the ground coriander, liquid smoke, and almond milk. Continue to cook, stirring frequently, for another 5 minutes, allowing the flavors to meld beautifully.
  2. While the soup is simmering, prepare the creamy base. Combine the drained raw cashews and the chipotle chile in adobo sauce in a blender. Carefully add 1 cup of the simmering broth from the soup to the blender. Blend until the mixture is completely smooth and creamy. Then, add 1 more cup of the hot soup liquid to the blender and blend again until the consistency is perfectly smooth and velvety.
  3. Gently stir the cashew and chipotle mixture back into the simmering soup in the saucepan. Mix thoroughly to combine all ingredients and ensure even distribution of the rich, creamy base.
  4. Taste the chowder and adjust the seasonings as needed. You might want to add more salt, pepper, or a touch more chipotle for extra heat. Ladle the warm soup into individual bowls. Garnish generously with fresh minced parsley and chopped pimientos before serving for a vibrant finish.
