Why You’ll Love This Easy Vegan Orange Cake
There’s something uniquely comforting about a homemade cake sitting on the counter, inviting a moment of sweet escape. This citrusy one-bowl orange cake elevates that feeling, making it effortlessly easy to whip up a delightful dessert. Imagine it, glazed with a hint of boozy marmalade – a truly irresistible combination!
My journey with oranges has been a long one, rooted in the “Orange City” of India, where fresh, sweet, and incredibly juicy oranges were a daily joy. Those vibrant flavors remain a cherished memory, often appearing in my dreams. After decades, finding that perfect balance of sweetness and zest in store-bought orange juice can be a challenge. Yet, this cake transforms even leftover carton orange juice into something truly special. It’s not just a recipe; it’s a clever solution for that half-empty bottle of juice forgotten in the fridge – a common occurrence in my household!
This cake is designed for simplicity and deliciousness. With its one-bowl preparation, you minimize cleanup, making baking less of a chore and more of a pleasure. The recipe features only eight main ingredients, proving that extraordinary flavor doesn’t require an extensive shopping list. Furthermore, it uses just two tablespoons of oil, creating a healthier, yet still wonderfully moist, vegan orange cake. It’s a testament to how simple ingredients can come together to create something truly magical.
The Magic of Oranges: From Grove to Glaze
Oranges are a powerhouse of flavor and aroma, making them an ideal ingredient for baking. Their bright, tangy, and subtly sweet notes infuse cakes with a refreshing zest that’s hard to resist. The type of orange juice you use can subtly change the cake’s profile. While I generally opt for carton orange juice for convenience, remember that brands and varieties can differ in sweetness and intensity. For a bolder, more authentic orange flavor, I highly recommend incorporating fresh orange zest into the batter. This simple addition unlocks a concentrated burst of citrus that truly makes the cake shine. Alternatively, a flavorful orange marmalade frosting or glaze can provide that extra layer of citrusy delight.
This recipe yields a cake that resembles a classic sponge – tender and airy. To ensure maximum moisture and a richer flavor, consider adding a bit more oil to the batter if you prefer an extra-rich crumb. The beauty of this cake lies in its versatility; it serves as a fantastic canvas for various glazes and frostings, allowing you to customize it to your heart’s content. Whether you prefer a simple powdered sugar glaze or a more elaborate boozy marmalade, this cake is ready to be dressed up or enjoyed in its simple, unadorned glory.

Vegan Orange Cake made in 1 Bowl and just 8 ingredients! Easy Moist Citrusy Vegan Cake. Soyfree Palm-Oil-free Recipe. Makes 1 8 or 9 inch cake pan.
Ingredients
Dry:
- 1 cup whole wheat pastry flour or Spelt flour (or 1 1/4 cup all purpose flour)
- 1/2 cup unbleached white flour or all purpose flour
- 1 tbsp starch like corn or arrowroot
- 3/4 cup powdered sugar (I powder raw sugar; add 2 to 4 tbsp more for sweeter taste)
- 3/4 tsp baking soda
- a generous pinch of salt
Wet:
- 1 cup orange juice
- 2 tbsp oil
- 1 tsp vinegar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees F / 180ºc. Line an 8 or 9 inch cake pan with parchment paper, or grease well and dust with flour.
- In a bowl, whisk all the dry ingredients until thoroughly combined.
- Add the wet ingredients to the bowl and mix until the batter is smooth. Pour the batter into the prepared cake pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes, then remove from the pan. Cool completely before slicing.
- Add frosting of choice, such as vegan cream cheese frosting, whipped coconut cream with fruit, or make a boozy marmalade glaze.
- For the boozy glaze: Mix 1 tablespoon of liquor into 1/4 cup of orange or apricot marmalade or preserves of your choice. Heat for a few minutes until bubbling. Use as a glaze or serve alongside each slice.
- For a regular glaze: Use 1 tablespoon of orange juice mixed with marmalade, or combine 2 to 3 tablespoons of orange juice with 1/3 cup or more powdered sugar.
Baker’s Notes for the Best Vegan Orange Cake
For stronger Orange flavor, add the zest of a small to medium orange. This is a must for a truly zesty and aromatic cake.
Use finely ground or powdered sugar in this cake. If the sugar isn’t fine enough, it might feel granulated within the finished cake.
Overbaking can make the cake a bit dry, but it will soften as it cools. To ensure a moist texture, add enough glaze or frosting. For an even more moist cake, consider adding another 2 tablespoons of oil to the batter.
This recipe is versatile! You can also make this into a loaf cake. Feel free to add nuts and dried fruits of your choice, such as cranberries or currants, and bake for 40 to 45 minutes.
