The Kashmiri Dal Recipe: Simple Steps to Authentic Flavor

This recipe combines traditional methods with readily available ingredients, allowing you to create a deeply flavorful and comforting Kashmiri Dal right in your own kitchen. It’s naturally vegan and free of many common allergens, making it a perfect meal for a diverse audience.

Kashmiri Dal 
Allergen Information: Free of Dairy, egg, corn, soy, gluten, grain, yeast
Serves 2 to 4
Ingredients:
1/2 cup chana dal (split chickpeas) or split yellow peas
1/2 cup mung dal (petite yellow lentils) or use split peas
3.5 cups water
3/4 tsp salt

For the Tempering (Tadka):
1 tsp organic canola or safflower oil
1/2 cup finely chopped red onion
1 bay leaf
1 inch ginger, chopped
1/2 tsp fennel seeds
1/4 tsp cumin seeds
1/4 tsp cinnamon powder
1/4 tsp cardamom powder
1/8 tsp clove powder
1/8 tsp black pepper
1/2 tsp red pepper flakes or to taste
1/2 to 1 tsp paprika 
1 tsp lemon juice

For Garnish:
Fresh cilantro, chopped
Extra lemon juice, if desired

Method:
1. Begin by thoroughly washing the chana dal and mung dal under cold water until the water runs clear. Soak the dals in enough water to cover them by an inch or two for at least one hour (or up to 4 hours). After soaking, drain the dals well. Transfer the drained dals to a deep, heavy-bottomed pan and add 3.5 cups of fresh water. Partially cover the pan with a lid and cook over medium heat for 20 to 30 minutes, or until the split peas are beautifully tender and slightly mushy. Stir occasionally to prevent sticking. Once cooked, stir in the salt and reduce the heat to low, allowing the dal to simmer gently while you prepare the tempering. (Note: If you only have one type of dal, you can use 1 cup of split yellow peas or 1 cup of mung dal. Mung dal generally cooks faster than chana dal).
2. Meanwhile, prepare the aromatic tempering (tadka). In a separate medium skillet, add the oil and heat it over medium heat until shimmering.
3. Add the finely chopped red onions to the hot oil. Cook them for 5 to 7 minutes, stirring frequently, until they become translucent and softened.
4. While the onions are cooking, prepare the spice paste. In a grinder or a small blender, combine the bay leaf, chopped ginger, fennel seeds, cumin seeds, cinnamon powder, cardamom powder, clove powder, black pepper, red pepper flakes, paprika, and 1 tsp of lemon juice. Blend until a smooth paste forms. If needed, add a few teaspoons of water to help the blending process.
5. Add the prepared ginger-spice mixture to the cooked onions in the skillet. Mix thoroughly, ensuring all ingredients are well combined. Cook this mixture for 2 to 3 minutes, stirring frequently, until the ginger and spices become wonderfully fragrant and have a distinct roasted aroma. This step is crucial for developing the deep flavors.
6. Carefully pour the hot, sizzling tempering directly into the simmering dal. Mix well to incorporate all the flavors. Taste the dal and adjust the salt and spice levels according to your preference.
7. Continue to cook the dal for another 5 minutes or longer if you prefer a thicker, more concentrated soup. If the dal becomes too thick, you can add a little hot water to thin it to your desired consistency. Serve the Kashmiri Dal hot, generously garnished with fresh cilantro and a squeeze of fresh lemon juice. It pairs wonderfully with cumin-scented rice, fluffy quinoa, or your favorite Indian flatbread like roti or naan.

Variations & Customizations:
For an added vegetable boost, chop some turnip or another root vegetable into small pieces and add them to the dals in Step 1. Cook until tender along with the lentils. 
If you happen to find authentic Kashmiri garam masala, you can use it instead of the individual spices. Mix 1 to 1.5 teaspoons of Kashmiri garam masala with the paprika and ginger to form the paste in Step 4.
