- 1/4 teaspoon heaped fine sea salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 tsp organic vanilla extract
- 1 1/4 cups flour, I use unbleached white flour
- 1 cup vegan chocolate chips
Instructions

Preheat the oven to 350 degrees F / 180ºc. Line a large baking sheet with parchment paper.

Add all wet ingredients, from coconut oil through vanilla extract, to a stand mixer and beat until light and fluffy. Alternatively, use a bowl and a hand-held beater to achieve the same fluffy consistency.

Gradually add the flour: first, mix in 1 cup of flour. Then, add the remaining 1/4 cup. If needed, incorporate additional flour one tablespoon at a time until you achieve a soft cookie dough.
