Ingredients
Cajun Tofu:
- 12 to 14 oz firm tofu
- 1.5 to 2 tbsp Cajun spice blend, see note
- 1 tbsp lime juice
- 2 tsp olive oil
- 1/4 to 1/2 tsp salt
Cilantro Lime Rice:
- 1 cup long grain rice or basmati rice
- 1/2 tsp oil
- 2 cups water
- 1/2 tsp salt
- 1 tbsp or more lime juice
- 1/4 cup packed finely chopped cilantro
Bowl Ingredients:
- Crunchy greens, chopped tomato or cucumber, lime juice
Instructions

Press the tofu (wrap in paper towel, then a clean kitchen towel, and place a couple of heavy books on it for about 15 minutes, or use a tofu press). Once pressed, slice the tofu into 1/4-inch thick pieces. Preheat your oven to 350 degrees F (175 C).

In a small bowl, combine the Cajun spices with lime juice, olive oil, and salt to create a thick paste. Evenly rub this Cajun paste over the tofu slices. Allow the tofu to marinate for at least 15 minutes, or up to an hour, to absorb the flavors. *See Note for variations. Alternatively, if you prefer, you can toss cubed tofu in olive oil, then in a dry Cajun spice blend mixed with salt. In this case, drizzle the lime juice after baking.

Arrange the marinated tofu slices on a baking sheet and bake in the preheated oven for 30 to 35 minutes, or until golden brown and slightly firm. Let the tofu cool for a few minutes before slicing and serving.

While the tofu is baking, prepare the cilantro lime rice. Wash and soak the rice for at least 15 minutes. (I typically do this alongside pressing the tofu so that both components are ready around the same time).

Drain the soaked rice and transfer it to a saucepan. Add salt, water, and oil (if using), and mix gently. You can also add a bay leaf for extra aroma.

Bring the water to a boil, then reduce the heat to medium-low, cover the saucepan, and cook for 18 to 20 minutes, or until all the water is absorbed and the rice is tender. Once cooked, fluff the rice with a fork, then stir in the lime juice and half of the finely chopped cilantro. Taste and adjust seasoning carefully. Cover and let it sit for another 2 minutes. Garnish with the remaining cilantro just before serving.
