Back then, the entire concept of the internet, let alone blogging, was a bewildering landscape for me. I vividly recall the early days when uploading a simple photo from my camera to the computer felt like a monumental task, and Google was still a mystery I was slowly unraveling. - 1/2 cup water
- 2 cups almond milk
- 1/2 cup granulated sugar
- 1/4 cup + 2 tbsp chickpea flour
- 1 1/2 tbsp cornstarch
- 1/8 tsp of salt
- 2 vanilla beans, split and scraped
- 2-3 tbsp granulated sugar (for topping)

Drain and rinse the soaked cashews thoroughly, then transfer them to a food processor or a high-powered blender. Add 1/2 cup of water and blend until the mixture is completely smooth and creamy. Be sure to scrape down the sides of the blender as needed to ensure all cashews are incorporated. Set this smooth cashew cream aside.

In a medium-sized saucepan, combine the almond milk, 1/2 cup of granulated sugar, chickpea flour, cornstarch, salt, and the scraped vanilla bean pulp along with the pods. Stir all the ingredients together until well combined and smooth. Place the saucepan over medium heat, stirring constantly to prevent sticking and ensure even cooking. Bring the mixture to a low boil. At this stage, you will notice the milk mixture beginning to thicken considerably. Continue stirring and scraping the sides of the pot for two additional minutes while it boils gently. This step is crucial for fully cooking the chickpea flour and cornstarch, eliminating any raw taste. Remove the saucepan from the heat and allow the mixture to cool for about 10 minutes.

Arrange four individual ramekins or custard cups onto a sturdy sheet tray, ensuring they are placed on a flat, stable surface for easy handling and chilling.

Once the thickened milk mixture has cooled slightly, carefully remove and discard the vanilla bean pods. Pour the warm, thick milk mixture into the food processor containing the pureed cashews. Blend everything again until the custard is exceptionally smooth and completely uniform in texture. Divide the blended custard evenly among the prepared ramekins. Cover each ramekin tightly with aluminum foil to prevent a skin from forming and refrigerate until thoroughly chilled, which will take at least 3 hours. For best results, allow them to chill for 6 hours or overnight. These pre-torched custards can be stored in the refrigerator for up to 3-4 days.
