While historically prepared with white sticky rice, this vegan rendition thoughtfully opts for brown rice, enhancing its nutritional profile. Typically crowned with a fried egg, this plant-based version naturally omits it. For those seeking a soy-free alternative, simply substitute the soy sauce with coconut aminos.

Ingredients:

  • 3 tablespoons gochujang paste (Korean chili paste)
  • 1 tablespoon soy sauce (or coconut aminos for soy-free)
  • 1 tablespoon dark sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon agave nectar
  • 1 tablespoon grapeseed oil or other neutral oil
  • 1 large yellow onion, chopped
  • 1 red bell pepper, seeded and cut into matchsticks
  • 2 cloves garlic, minced
  • 3 cups shredded green cabbage
  • 1 carrot, coarsely shredded
  • 1 cup thinly sliced white or shiitake mushrooms
  • 3 cups cooked brown rice
  • ½ English cucumber, peeled and cut into matchsticks
  • 1 tablespoon toasted sesame seeds

Method:

  1. In a medium bowl, combine the gochujang paste, soy sauce (or coconut aminos), sesame oil, rice vinegar, and agave nectar. Stir these ingredients together until thoroughly mixed. Set this sauce aside.
  2. Heat the grapeseed oil (or your chosen neutral oil) in a large skillet or wok over medium-high heat. Once hot, add the chopped onion, red bell pepper matchsticks, and minced garlic. Stir-fry for approximately 2 minutes, allowing the vegetables to soften slightly and become fragrant.
  3. Next, add the shredded green cabbage and coarsely shredded carrots to the skillet. Continue to stir-fry for an additional 2 minutes, ensuring the vegetables are well combined and beginning to tenderize.
  4. Stir in the thinly sliced mushrooms and stir-fry for 1 minute. Then, pour in the previously reserved sauce mixture, stirring continuously to evenly coat all the vegetables.
